White Pheasant Chili

Well, it looks good.   Not sure how it tastes, but I have to use the pheasant the hubby shot last weekend.   This weekend, there will be more.....

1-2 lbs of pheasant - lightly poached
white chicken chili seasoning mix from McCormick
1 can green chilies
1 15 oz can S&W white beans (undrained)
1 cup water
3/4 cup chicken stock

Boil meat slowly.  Cut and cube into 1-2" pieces. 2T oil in kettle - once hot, toss in cubed pheasant and fry until no longer pink.  Add water, chicken stock, green chilies and seasoning mix.  Bring to boil and simmer for minimum of 30 minutes.  Serve with shredded cheeese, avocado slices, cilantro or sour cream.   I think I may make some rice or noodles to pour it over.  

...not entirely convinced that i am having this for dinner... but I be sure to sample it.  (i think)
